The Clyborne Story

S.W. Clyborne Co. Provision & Spirits is a locally owned, chef-driven gastropub in Mason, Ohio, created to bring an urban-style dining experience to the suburbs. Opened in April 2018 by Mason residents Scott Schmidt and Will Wadsworth, Clyborne’s was built on a simple idea: offering the creativity, energy, and quality of city dining right here in the neighborhood.

The name S.W. Clyborne Co. Provision & Spirits reflects both personal history and local heritage. S.W. represents Scott and Will, while Clyborne nods to Scott’s first restaurant near Clybourne Avenue in Chicago. Provision & Spirits pays tribute to Mason’s past as a provisioning stop for stagecoaches and trains, supplying food, drink, and rest to travelers along the way. Together, the name honors where we started and the community we’re proud to serve.

From the moment you step inside, the experience is unexpected. An unassuming suburban storefront opens into a richly detailed space inspired by Victorian post-industrial design, featuring custom elements like a central gargoyle street lamp, steampunk-inspired metalwork, and vintage china sourced from pre–World War II estate sales. Designed by Erin Schmidt with hands-on involvement from Scott, Will, their families, and the culinary team, Clyborne’s was truly a labor of love.

The menu is rooted in seasonal American cuisine, with everything made from scratch using high-quality ingredients. Our collaborative kitchen philosophy brings chefs together to develop each dish, setting aside egos in favor of creativity and teamwork. Dietary needs are taken seriously, with strict protocols in place for food allergies and gluten intolerance, including dedicated gluten-free fryers and color-coded utensils. We believe gluten-free dining should still be delicious, and many guest favorites reflect that commitment.

The bar is guided by the same care and intention as the kitchen. Our curated wine list is extensive and priced at the state minimum, because enjoying a great bottle with dinner should feel accessible and not break the bank. Signature cocktails and a thoughtful selection of spirits are designed to complement the menu and elevate the overall experience. For guests seeking a more immersive experience, the Chef’s Table offers a front-row seat to the culinary action.
